Why does whisky mature in the cask at around 60 per cent alcohol by volume?

When our whisky is placed in an oak cask, it has an alcohol content of around 60 per cent. This is no coincidence: alcohol and water extract different aromas from the wood. Over the years, this results in a complex interplay of aroma, flavour and character.

What is a cask-strength whisky?

A cask-strength whisky (Cask Strength) is bottled without any significant dilution. It therefore largely retains the alcohol content it had at the end of its cask maturation. Powerful, intense and full of character.

How should you enjoy it?

Take your time. First, discover its aroma and flavour, without adding any water at all. Then add a few drops of still water. The sharpness of the alcohol recedes slightly, allowing hidden flavours to emerge. You might suddenly discover a fruity note, a hint of vanilla or subtle spices.

Experiment with just a few drops. Because sometimes it only takes a little water to bring out a new side to a whisky.
